A quick and healthy way to make moist and fluffy muffins using Kodiak muffin mix combined with creamy Greek yogurt. Perfect for a protein-packed breakfast or snack.
Ingredients
2 cups Kodiak muffin mix
1 cup plain Greek yogurt
2 large eggs
1/4 cup milk
1/4 cup honey
1 teaspoon vanilla extract
Instructions
Preheat the oven to 375°F (190°C).
Line a 12-cup muffin tin with paper liners or grease the cups with cooking spray.
In a large mixing bowl, combine 2 cups of Kodiak muffin mix, 1 cup of plain Greek yogurt, 2 large eggs, 1/4 cup of milk, 1/4 cup of honey, and 1 teaspoon of vanilla extract.
Stir the ingredients together until just combined. Do not overmix; the batter should be slightly lumpy.
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the pan for 5 minutes.
Transfer the muffins to a wire rack to cool completely before serving.
