Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and sliced
2 celery stalks, sliced
1 medium zucchini, diced
1 medium potato, peeled and diced
1 cup green beans, trimmed and cut into 1-inch pieces
6 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon dried rosemary
1/2 teaspoon black pepper
1 teaspoon salt
1 bay leaf
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until fragrant.
Add sliced carrots, celery, zucchini, potato, and green beans to the pot. Stir and cook for 5 minutes.
Pour in the chicken broth and stir to combine.
Add shredded cooked chicken, dried thyme, dried parsley, dried rosemary, black pepper, salt, and bay leaf.
Bring the soup to a boil, then reduce heat to low and simmer uncovered for 30 minutes, or until the vegetables are tender.
Remove the bay leaf before serving.
Taste and adjust seasoning if needed.
