Tender chicken breast fillets filled with a creamy mix of cream cheese, fresh spinach, garlic, and herbs, pan-seared then oven baked to golden perfection.
Ingredients
4 chicken breast fillets
4 oz cream cheese
1 cup fresh spinach, chopped
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 teaspoon dried Italian herbs
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix cream cheese, chopped spinach, minced garlic, salt, black pepper, and dried Italian herbs until well combined.
Lay chicken breast fillets flat and spread the cream cheese and spinach mixture evenly over each fillet.
Roll up each fillet tightly and secure with toothpicks if needed.
Heat olive oil in a pan over medium-high heat and sear the chicken roll ups until golden brown on all sides, about 3 minutes per side.
Transfer the seared roll ups to a baking dish and bake in the preheated oven for 20 minutes, or until the chicken is cooked through and juices run clear.
Remove toothpicks before slicing and serving.
Slice each roll up into 1-inch pieces and arrange in a fan shape on a white plate.
Drizzle lightly with olive oil before serving.
