Creamy Cottage Cheese Pasta

Description

A quick and delicious creamy cottage cheese pasta that combines the richness of cottage cheese with simple ingredients for a comforting meal.


Ingredients

12 ounces dry pasta (such as penne or fusilli)
1 tablespoon olive oil
3 cloves garlic, minced
1 cup cottage cheese (full fat)
1/2 cup grated Parmesan cheese
1/2 cup whole milk
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons fresh parsley, chopped


Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
In a medium bowl, combine the cottage cheese, grated Parmesan cheese, whole milk, salt, black pepper, and crushed red pepper flakes. Stir until smooth and creamy.
Add the cooked pasta to the skillet with garlic and pour the cottage cheese mixture over the pasta.
Toss everything together over low heat for 2-3 minutes until the sauce is warmed through and coats the pasta evenly.
Remove from heat and sprinkle with chopped fresh parsley.
Serve immediately.
