Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 bell pepper, diced
2 cans (15 oz each) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
1 cup vegetable broth
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat.
Add onion and bell pepper; sauté until softened, about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Add chili powder, cumin, and smoked paprika; stir to coat vegetables.
Pour in black beans, diced tomatoes, and vegetable broth.
Bring to a simmer, reduce heat, and cook uncovered for 20-25 minutes, stirring occasionally.
Season with salt and pepper to taste before serving.
