Tender mini turkey meatloaves packed with herbs and spices, perfect for easy weeknight dinners and leftovers.
Ingredients
1 lb ground turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
1/4 cup milk
1 egg
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
1/2 cup ketchup or tomato sauce (for topping)
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine ground turkey, breadcrumbs, Parmesan, onion, milk, egg, garlic, oregano, basil, salt, and pepper.
Mix gently until just combined—avoid overmixing to keep meatloaf tender.
Divide mixture evenly into a greased muffin tin or mini loaf pans.
Spread a little ketchup or tomato sauce on top of each mini loaf.
Bake for 25-30 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
Let rest for a few minutes before serving.
