A creamy, hearty chili made with ground turkey and white beans, perfect for a healthy and comforting dinner.
Ingredients
1 tablespoon olive oil
1 pound ground turkey
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
2 cans (15 oz each) white beans, drained and rinsed
2 cups low-sodium chicken broth
1 can (4 oz) diced green chilies
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
Heat olive oil in a large pot over medium heat.
Add onion and cook until softened, about 5 minutes.
Stir in garlic, cumin, chili powder, smoked paprika, and cayenne; cook for 1 minute until fragrant.
Add ground turkey, breaking it up with a spoon, and cook until browned, about 7 minutes.
Stir in white beans, chicken broth, and green chilies.
Bring to a simmer and cook uncovered for 15 minutes, stirring occasionally.
Season with salt and pepper to taste.
Serve garnished with fresh cilantro if desired.
