Ingredients
1 pound ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
1 medium carrot, peeled and diced
1 celery stalk, diced
1 cup mushrooms, sliced
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup beef broth
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion, carrot, and celery to the skillet. Sauté for 5 minutes until vegetables begin to soften.
Add minced garlic and sliced mushrooms. Cook for another 3 minutes until mushrooms release their moisture.
Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned and no longer pink, about 7 minutes.
Stir in tomato paste, diced tomatoes with their juice, and beef broth.
Add dried oregano, dried basil, salt, and black pepper. Stir to combine.
Reduce heat to low and simmer uncovered for 10 minutes, allowing the sauce to thicken and flavors to meld.
Taste and adjust seasoning if necessary.
Serve hot, optionally with rice, mashed potatoes, or crusty bread.
