Juicy, tender steak bites seared to perfection and tossed in a rich, flavorful cowboy butter sauce made with garlic, herbs, and spices. Perfect as an appetizer or a hearty snack.
Ingredients
1 pound sirloin steak, cut into 1-inch cubes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
4 tablespoons unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 teaspoon fresh chives, finely chopped
1 teaspoon fresh thyme leaves
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1 teaspoon fresh lemon juice
Instructions
Pat the steak cubes dry with paper towels to ensure a good sear.
Season the steak cubes evenly with kosher salt and freshly ground black pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak cubes to the skillet in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes without stirring to develop a brown crust.
Flip the steak bites and cook for an additional 2-3 minutes until browned and cooked to your desired doneness. Remove the steak bites from the skillet and set aside on a plate.
In a medium bowl, combine the softened butter, minced garlic, chopped parsley, chives, thyme, smoked paprika, cayenne pepper, and fresh lemon juice. Mix well to create the cowboy butter.
Return the skillet to low heat and add the cowboy butter mixture. Stir continuously until the butter is melted and fragrant, about 1-2 minutes.
Add the cooked steak bites back into the skillet and toss them in the cowboy butter sauce until well coated and heated through, about 1-2 minutes.
Remove from heat and transfer the steak bites to a serving dish. Serve immediately.
