A quick and flavorful stir fry featuring lean ground turkey tossed in a homemade teriyaki sauce with fresh vegetables.
Ingredients
1 lb ground turkey
2 tablespoons vegetable oil
1 red bell pepper, sliced
1 cup snap peas
1 carrot, thinly sliced
2 cloves garlic, minced
1 teaspoon ginger, grated
¼ cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon cornstarch mixed with 2 tablespoons water
Cooked rice or noodles, for serving
Instructions
Heat oil in a large skillet over medium-high heat.
Add ground turkey and cook until browned, breaking it up with a spoon.
Stir in garlic and ginger; cook for 1 minute until fragrant.
Add bell pepper, snap peas, and carrot; sauté for 3-4 minutes until vegetables are crisp-tender.
In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch slurry.
Pour sauce over turkey and vegetables; stir and cook until sauce thickens and coats everything, about 2 minutes.
Serve hot over cooked rice or noodles.
