A warm and comforting banana bread baked oatmeal that’s perfect for a healthy breakfast or snack. Packed with ripe bananas, oats, and a hint of cinnamon, this baked oatmeal is easy to make and deliciously satisfying.
Ingredients
2 cups old-fashioned rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large ripe bananas, mashed
2 large eggs
1/4 cup pure maple syrup
1/4 cup unsweetened almond milk
1 teaspoon vanilla extract
2 tablespoons melted coconut oil
Instructions
Preheat the oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish with coconut oil.
In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir to mix evenly.
In a separate bowl, whisk together the mashed bananas, eggs, maple syrup, almond milk, vanilla extract, and melted coconut oil until smooth.
Pour the wet ingredients into the dry ingredients and stir until fully combined.
Transfer the mixture to the prepared baking dish and spread it out evenly.
Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let cool for 5 minutes before serving.
