Description

Ingredients

1 pound ground turkey
1 medium red bell pepper, diced
1 medium zucchini, diced
1 cup mushrooms, sliced
1 small yellow onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
Salt, to taste
Black pepper, to taste
2 cups fresh spinach leaves
1/4 cup grated Parmesan cheese


Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until fragrant.
Add ground turkey to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
Season the turkey with dried oregano, dried basil, smoked paprika, red pepper flakes, salt, and black pepper. Stir well to combine.
Add diced red bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for 5-6 minutes until the vegetables are tender but still slightly crisp.
Add fresh spinach leaves and cook for an additional 1-2 minutes until wilted.
Remove the skillet from heat and sprinkle grated Parmesan cheese over the top.
Stir gently to combine the cheese with the skillet mixture.
Serve hot and enjoy your low carb ground turkey dinner.
