Ingredients
2 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
2 large eggs
1 tablespoon butter
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a medium bowl, toss the diced potatoes with olive oil, salt, black pepper, smoked paprika, and garlic powder until evenly coated.
Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 12 minutes, shaking the basket halfway through to ensure even cooking and crispiness.
While the potatoes are cooking, heat a non-stick skillet over medium heat and melt the butter.
Crack the eggs into the skillet and cook until the whites are set and the yolks reach your desired doneness, about 3 to 4 minutes for sunny side up.
Once the potatoes are crispy and golden, transfer them to serving plates.
Top the potatoes with the cooked eggs and serve immediately.
