A warm, cheesy skillet packed with quinoa, black beans, and taco flavors, perfect for a quick and comforting dinner.
Ingredients
1 cup quinoa, rinsed
1 can black beans, drained and rinsed
1 cup shredded cheese (cheddar or Mexican blend)
1 cup salsa
1 cup vegetable broth
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Optional toppings: sliced avocado, chopped cilantro, lime wedges
Instructions
Heat olive oil in a large skillet over medium heat.
Add quinoa and toast for 2 minutes, stirring frequently.
Stir in chili powder, cumin, salt, and pepper.
Pour in vegetable broth and salsa, bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked.
Fold in black beans and half the cheese.
Sprinkle remaining cheese on top, cover, and cook until cheese melts, about 5 minutes.
Serve with desired toppings.
