Description

A deliciously chewy cookie made without brown sugar, using white sugar and a few simple ingredients for a soft, satisfying treat.


Ingredients

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted and cooled
1 cup granulated white sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract


Instructions

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
In a large bowl, combine the melted and cooled unsalted butter with the granulated white sugar. Mix until smooth and creamy.
Add the egg and egg yolk to the butter and sugar mixture. Beat until well combined.
Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10 to 12 minutes, or until the edges are set and lightly golden but the centers still look soft.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
